Chicken Barley Soup

 Chicken Barley Soup


Serves 10

Ingredients

1 T olive oil

1 medium onion, chopped

3 garlic cloves, minced

1/3 cup pearl barley

1 qt chicken broth

6 boneless chicken breast halves

1/2 cup minced parsley

1 cup lentils

1 (15 oz) can diced tomatoes

1 (16 oz) can garbanzo beans, drained and rinsed 

1 (16 oz) jar salsa

1 lb fresh spinach, chopped

Directions

In large saucepan, heat oil, add onions, garlic and barley until onions are tender and barley is toasted.

Add broth, chicken, parsley, lentils and tomatoes.  Simmer for 30 minutes.  

Remove chicken breast and cut into bite-size pieces. Return to pot and add the beans and salsa.  Simmer for 20 minutes. Stir in the chopped spinach and remove from heat. 


Tips:  I usually put the soup in bowl and then add the spinach
