Sausage Stew

 Sausage and Cabbage Stew

Ingredients

1 Tb. olive oil

1 small onion, diced

4-6 Polish sausages, sliced lengthways and the chopped into half circles

(You can use whatever type of sausage you prefer for this.)

1 28 oz can of diced tomatoes

1 can of white beans, drained

Italian seasoning - season to taste

2 cups diced cabbage

2 medium red or Yukon potatoes, diced.

Salt to taste

1-2 cups beef broth, depending on how thick you want the soup.


In a medium sized sauce pan heat olive oil over medium high heat.  Add the onion and cook until translucent.   Add the rest of the ingredients and cook over medium heat for 15-20 minutes until the potatoes are soft when poked with a fork.
