Crockpot Angel Chicken

 Crockpot Angel Chicken Serves 6 Prep time 20 min Cook time 25 min Ingredients: 6 boneless chicken breast 1 cup butter  1 package dried Italian salad dressing mix 1 10 1/2 oz can Campbells golden mushroom soup 1 c chicken broth 4 oz cream cheese chives Onions  Angel hair pasta (cooked according to directions) Directions: Place the chicken in the crock pot.  Melt butter in a saucepan. Stir Italian salad dressing mix, can of soup, cream cheese and broth.  Pour over chicken. Cook on low in the crock pot for 4-5 hours.  Pour over cooked angel hair pasta or other noodles or rice.

Instant crack chicken

 Instant Crack chicken Serves 6 Prep time 5 min Cook time 15 min Ingredients: 6-8 slices cooked bacon 2 lb boneless chicken breast 1 packet ranch seasoning  8 oz cream cheese 1/2 c water 1 c cheddar cheese   Directions Place chicken and cream cheese in the instant pot.   Sprinkle the packet of ranch seasoning over the top. Add half a cup of water. Place your instant pot on manual high pressure for 15 min Do a quick release Remove chicken only and shred ( I use my kitchen aid hand mixer to shred my chicken, but you can use forks0 Keep your instant pot on sauce and put chicken back in. Add cheese and stir. Stir in bacon and enjoy.

Steak Chili

 Steak Chili Ingredients 1 1/2 lbs stew beef 1/2 large yellow onion, chopped 15 oz can pinto beans, rinsed and drained 28 oz can petite diced tomatoes 1 cup beef broth 1 Tb chili powder 2 tsp ground cumin 1 1/2 tsp garlic salt 1/4 tsp crushed red pepper flakes 1/4 tsp dried oregano 1/4 tsp pepper Optional toppings: shredded cheddar cheese,  sour cream, diced avocados

Easy Cheese and Corn chowder

 Cheese and Corn Chowder Serves 8 Combine in a saucepan: 1 cup water 4 c diced potatoes 2 cups sliced carrots 2 c chopped celery 2 tsp  salt 1/2 tsp pepper Cover and simmer 10 min.  Add: 2 14 oz cans cream style corn Simmer for 5 minutes. Add: 3 cups milk 2 cups shredded cheddar cheese Stir until cheese melts and chowder is heated through. Do not boil.

Sausage Stew

 Sausage and Cabbage Stew Ingredients 1 Tb. olive oil 1 small onion, diced 4-6 Polish sausages, sliced lengthways and the chopped into half circles (You can use whatever type of sausage you prefer for this.) 1 28 oz can of diced tomatoes 1 can of white beans, drained Italian seasoning - season to taste 2 cups diced cabbage 2 medium red or Yukon potatoes, diced. Salt to taste 1-2 cups beef broth, depending on how thick you want the soup. In a medium sized sauce pan heat olive oil over medium high heat.  Add the onion and cook until translucent.   Add the rest of the ingredients and cook over medium heat for 15-20 minutes until the potatoes are soft when poked with a fork.

Chicken Barley Soup

 Chicken Barley Soup Serves 10 Ingredients 1 T olive oil 1 medium onion, chopped 3 garlic cloves, minced 1/3 cup pearl barley 1 qt chicken broth 6 boneless chicken breast halves 1/2 cup minced parsley 1 cup lentils 1 (15 oz) can diced tomatoes 1 (16 oz) can garbanzo beans, drained and rinsed  1 (16 oz) jar salsa 1 lb fresh spinach, chopped Directions In large saucepan, heat oil, add onions, garlic and barley until onions are tender and barley is toasted. Add broth, chicken, parsley, lentils and tomatoes.  Simmer for 30 minutes.   Remove chicken breast and cut into bite-size pieces. Return to pot and add the beans and salsa.  Simmer for 20 minutes. Stir in the chopped spinach and remove from heat.  Tips:  I usually put the soup in bowl and then add the spinach

  Instant Pot Taco Soup This soup is fast to make, uses minimal ingredients, and is great for families with allergies since it contains no gluten and the only dairy is on the side. Homemade Broccoli cheddar Soup

Homemade Broccoli Cheddar Soup  Prep Time: 10 mins Cook Time:   35 mins Total Time:   45 mins Servings:   8  Ingredients 1   tablespoon   butter ½   onion, chopped ¼   cup   melted butter ¼   cup   all-purpose flour 2   cups   milk 2   cups   chicken stock 1 ½   cups   coarsely chopped broccoli florets 1   cup   matchstick-cut carrots 1   stalk   celery, thinly sliced 2 ½   cups   shredded sharp Cheddar cheese salt and ground black pepper to taste Directions Gather all ingredients. Melt 1 tablespoon butter in a skillet over medium-high heat. Add onion; cook and stir until tender and translucent, about 5 minutes. Set aside. Meal trains...what should I bring?

        Meal trains.  They are such a blessing to so many, but signing up to bring a meal for one can be a little overwhelming at times.  What should I make?  What foods will this family eat or prefer?  Sometimes these questions are too much and we skip right past the meal train signup.  Sometimes we bite the bullet and take a stab in the dark and hope it turns out ok. Sometimes we just order them pizza, and this is a totally acceptable response, and is usually loved by all, but it's not the cheapest, and thus not always a real option - plus, you can only eat so much pizza.           I am not an expert or a chef, but I have made thousands of meals for my own family (really about 30 meals on repeat with a few others thrown in, if we are honest) and have delivered dozens of these meals to families needing a little boost, whether due to a new baby, the loss of a loved one, illness, or other stressful situations. ...
